Technically, if you do have a copy of XP Pro you can do that. If you're not liking Vista at the moment, though, you could always download and install a copy of Windows 7 RC. You can actually try that new OS for free until June 2010.
Regardless of how you go (XP or Windows 7 RC), you are going to want to back up your PC before you do anything. Here's a link to how to do that:

If you have your XP installation discs still, all you'll need to do is insert them and do a clean install. If you want to try out the Windows 7 RC, you can dowload that from here:
