Hi Kathryn,
Check this setting from Windows Mail main screen:
1. Click Tools -> Accounts
2. Select the email account for this and click Properties
3. Click Advanced tab
4. Look under "Leave a copy of messages on server"
A) Adjust the settings to what you want
5. Click OK
