I have a VM with two virtual ethernet adapters, I connected them to
different LANs and still am able to transmit and receive packets on
both.

I can force traffic for a specific destination IP out one or the other
by way of the route command (route add destination.ip local.gateway)

So in short, Vista handles this situation just fine.
