No, I understand that but here's what I'm talking about

Let's say I'm reading mail in my MSN account. I click the NEW button and a
new message opens with the account and signature set to my MSN info. I
realize that I actually want to send the message from my Gmail account so I
click the account drop down and switch it to Gmail. The problem is that the
signature already in the message stays set to my MSN info. I have to
manually delete it and insert the correct signature.

To do this click on Tools - Options then click the signature tab. Next to where you write in your text signature is a button labeled advanced, clicking in it opens a window where you can specify which email/news account to use the signature with. See the screenshot below:
