I have used Windows 7, experience with 8 and am now with 10. Others may disagree, but the best experience so far has been with 10. The major problem with 8 was the start screen. 10 seems to have removed the inconvenience and brrought in new features. From a more pragmatic point of view MS wants us to have 10, and is doing everything possible to encourage its use. For example, constant updating of the OS, not just security. A major update is being prepared for release this Summer. It is both fast and easy to use.
Although, I have given you my opinion, may I suggest that you visit both our 10 and 8 Forums, especially and get opnions from current users of the OS.

Personally IF I where on 8 I would install 10 and only because of the partial reinstatement of the start menu. Now to answer your question to my knowledge the only way to revert back to 8 would require either a restore from an image backup or a reinstall however you can ask the folks on the 8 or 10 forums. It is a completely different operating system and can't be uninstalled like a patch or third party program.

I've updated to Windows 10, and can see why some people weren't too keen at the start. I was lucky enough to have found the software sufficiently close to the mobile version on my Lumia 1020 to not have any issues, and much prefer 10 to 8. I've still got one machine on 7 just in case, but all my machines now run vista, 7 or 10 and I couldn't be happier.
It may take a day or two, but worth sticking with it - just make sure that the toolbar is set to 'bottom' not 'side'!!

I find Classic Shell (free program) good for getting back the start menu on later systems
