The 'Birthday' field is not an exportable field by default or as an available selection.

You must have misunderstood. An export from Hotmail contacts
(Windows Live Contacts) gives 81 different fields, ranging from
Sensitivity to Grandmother's Maiden Name. Field no. 41 is Birthday.
Not all of these fields are accessible in Hotmail, and it's a
slightly different subset that's accessible in WLMail. You could
probably populate them all in Hotmail, though, with an import from
Outlook. WLContacts are programmable.
