Does anybody know if it is possible to change headers in WLM when responding
to an email or a newsgroup message ?

such as :

John Smith wrote : bla bla bla...

You did not. I did, however, I changed the attribution line manually. I
don't know how to do it automatically in Windows Live mail.

That's not a header, but no, you can't change it.
