1. If you were doing what I think you might have been doing - in a compose window, click the 'To' button and try to copy the name or address shown - then that doesn't work, as you've discovered. The 'picker' window is just a view of selected data from the contacts database. What you can do, though, is click the 'To ->' button in the picker window and copy the entry that appears. Then click Cancel and paste into the body of your compose window.
2. You have a Nickname field for a contact. That may be equivalent to the 'display name' 'of your choosing' in OE. If the Nickname field is empty, WLMail will populate the Name field with Firstname Lastname (or vice versa if you have that option selected at View > Show...), Company Name if there are no First or Last names or, failing all else, e-mail address. The Name field is what you see when you click the 'To' button in a compose window.
In your OP, I'm not quite sure what you mean by 'changing the shortcuts to what is displayed in the TO: line' - what shortcut are you changing? And if it's not a good idea, why are you doing it?
