Greetings,

The only thing encrypted on Messenger is the authentication.
Conversations are sent in plain text and certainly can be sniffed.

There is some third-party development to get around this, like Simp:

Sure thing. You can always use something like Wireshark or Microsoft Network Monitor to see
exactly what's being sent too.
