Sell them one big server and SBS 2008 Premium.
SBS 2008 Premium includes a second server license that is a Hyper-V 1+1
license, meaning you can install it once on a physical machine, install the
Hyper-V role, then install it again as a virtual machine. So - install the
second server license of vanilla Win2k8 x64 on the new big server, then
install to virtual machines on top - one being your SBS, the other being the
second server set up as a dedicated TS.
