Yes, the SBS Server 2008 does backup the exchange mailboxes, and you can
recover one, some or all, depending on how you use the Recovery Storage
Group features:

But you should seldom have to use the recovery storage group if you keep the
deleted item retention settings for 30 to 60 days, or even more if your
organization requires it.
