Vista - Installing VMWare Server on my XP x86 workstation. Can I create virtual x64 servers?

I have a need for a virtual environment to mimmick my production environment
for testing purposes. My production environment is..........

ASDL router ---> ISA 2006 (W2K3 Server) ---> Gigbit switch....... All other
servers plugged into same switch and hubs are connected for workstations.

SBS 2008 Premium Server (x64)
Windows 2008 Standard Server (x64)
Windows 2003 Standard Server (x86)

So I want to install VMWare on my XP workstation and create the above
servers and configurations in a virtual environment. My only concern is
being on the same network that can cause issues having 2 SBS servers on the
same network. So my question is, giving my limited experience with VMWare is
what is the best approach to accomplish this?

Would I create the virtual ISA 2006 (W2K3 Server) and assign it a different
external IP address?
What about the virtual internal network? Do I put in on a different virtual
private subnet? Currently my production internal network uses
192.168.16.xxx. Would it be a good idea to use something like
192.168.100.xxx?
