My Documents in Vista is not folder only junction which corresponds to folders C:\Users\<account>\Documents and you should save there files. All junctions in Vista have permission:deny list folder read data thus you can't do that.It is normal and you shouldn't change permissions

see also:Documents and settings is not accessible. Access is denied.

Check permissions for C:\Users\<your account> and subfolders

You ,SYSTEM account and Administrators group should have full control (everything enabled)-if is unlike you should correct it but remember the owner of C:\Users\<your account> is SYSTEM not you ,if you want change permission for this folder you have to take ownership this folder see also:Folder Permissions

Re: administrative rights

If you go, C:, Windows, software distribution, then security, you will see the permissions you have, and can grant full control there.
