What files are important to back up?

I recently signed up for one of these on line data backup services for the
purposes of backing up my documents. I observe that there is also a folder
within Vista for my Application Data (file called "App Data"). Within the App
Data folder, there are 3 sub-folders entitled Local, Local Low, and Roaming.
Is it desirable (or necessary to back up any or all of the folders within the
App Data folder? If so, which one(s)?
