How to backup a specified folder

How do I backup a folder of my choice?

The only choices I see are a full backup or a generic backup of images,
movies...

So if I want to backup only my own image folder, how would I go about doing
that?

Another silly thing is that with the standard images backup feature, it
backs up standard windows gif files and stuff like that, why would I want a
backup of that?
