Direct X10 and Gforce 8800

Have Gforce 8800 video card which supports direct x10, do existing games
have to be patched by manufacturer to take advantage of direct x10?

Yes. Most games won't be patched.

Flight Simulator X is the notable exception.

Yes, they will need a patch, if they make one at all. FSX is working on
SP1 then they will work on the DX10 patch.

A few games will get patches like Company of Heroes and Flight Simulator.
Most won't though.

There are some games already in the works which should be released soon that
will have some Direct X 10 features. Crysis is one of them according to the
last video game sample I watched.

Company of Heroes wont see a DirectX 10 patch until mid-2007. Crysis and the
other DirectX10 games wont be out until around Summer 2007. DirectX 10 is
essentially useless until mid-2007.
