what does it mean to create a word document in docx? How is it different
from doc. and how are they different?

DOCX is the default extension of a Word document created in Word 2007. It
is a zipped file comprising of a number of files that are effectively an XML
representation of the document authored.

Office 2007 saves files in new XML-based formats. Word uses the .docx and .docm extensions. Docx files do not support macros, while docm files are macro-enabled. This is to cut down on the number of viruses aimed at Word documents.

Excel uses the .xlsx and .xlsm extensions, and PowerPoint uses the .pptx and .pptm extensions. Access has also changed its file format to an XML-based format, using the .accdb extension.

The new formats are not backward-compatible. Therefore, people using any older versions of Office will not be able to open files saved in the new formats. Since it will be some time before a majority of users have Office 2007, save files in the old formats if you intend to distribute them to other users, or ensure that they have installed the Microsoft Office Compatibility Pack, which allows older versions of Office to open (but not create) the new format files.

Docx files are in the new open office XML format. This formatted is
natively supported by MS Word 2007, with downloads available for Word
2003 to be able to open/save docx files. Microsoft also has a free Word
viewer available that can be used to read docx (as well as the older
doc) files.
