When using the Vista zip utility, is there a way to save the zipped output
elsewhere than on the original's drive? I keep running out of space.

If you want more control, use a 3rd party program like Alzip. It is a
    freebie, btw..

Just move the .zip file to the location where you want to unzip it, right
click the file and select Extract All. A folder with the name of the zip
file will be created to hold the extracted files.
