2 x 250GB HDD installed on Vista Ultimate PC. Disk 0 has MBR and data, disk 1
is empty. Do I simply convert both disks to dynamic? Is there any risk to the
HDD with the MBR? Will both HDD's then appear as a continuous volume?

Yes.
Dynamic disk
A physical hard disk formatted for dynamic storage, which includes support
for volumes that can span multiple disks.
You are trying to do 'striping'. Note the use of the word 'formatted'

Thx. Re yr comment: Note the use of the word 'formatted'. Both HDD's are
already formatted. Will conversion to dynamic format them again? Hopefully
not or else disk 0 will lose data and MBR.
