if you install an older OS once vista is installed you can use VistaBootPro to fix the boot menu back to multi booting.

Are you talking about a clean install so there is only the Server OS
replacing Vista, or a dual boot.
If the former, yes just do a clean install. If you mean wanting to retain
Vista and have a dual boot, that can be done too.
