How do you turn the...... not sure what it is called but when i start a new
message and type J in the "To:" ...... it seems to list all the people
beginning with "J" I have sent messages to in the past even though I only
have one person in my contacts beginning with "J".

When completing addresses, Windows Mail doesn't use the contacts
list. Instead, it uses a separate list of the last 29 addresses you sent
messages to. This list is very hard to edit; it's easier just to send
messages to the 29 addresses you want on the list. If you'd rather
use the contacts list, open a new message, but don't type any part
of the address. Instead, click on To:.
