Older email recipients have requested I use a different font and larger font
size in my messages. Is there a way to change the default settings or must I
change them for each email sent?

If you send in plain text format, Tools - Options - Compose -
Compose Font - Font settings...

If you send in HTML (Stationery) you can edit the stationery to use
different or larger font.
Tools - Options - Compose - Stationery - Mail - Select - Edit
change the 12pt to 18pt or whatever size you want, and Save
