I have windows mail. I'm trying to set up the "to" field so that when
composing a new email it automatially searches for the contact/recipient
after tying the first few letters. I have outlook express on an older
computer, which uses this method, but can't seem to get windows mail to do
the same.

It won't. WM can only remember the last 29 names that you had used. Names
beyond that list of 29, you will have to click TO button, then search for
the name.
If you install Windows Live Mail, it remembers ALL the names in the contact
list.
