Great to know it does work this way.
Your diagnosis is perfect.
I did enable the accounts column for my "inbox" folder and not all emails
received in the "inbox" had an account entry in the "account" column.
(the emails having entries in the "accounts" column does not have
consistency in listing the account it shows an account for some emails
received and blank for others)
To my surprise when I tried to reply to those emails received with an
account entry in the "accounts" column (other than the default account) it
works perfectly fine the from address as well the associated signature.
The "Sent items" folder already had the accounts column enabled and every
mail does have the respective entry in the accounts column.
So how do I get the windows mail to identify the correct accounts for the
Kindly advice as this would alleviate lot of troubles for me.
