excluding recipients' addresses from "To" line

How can I set up my Windows Email so that only the recipient's name, and not
his address, appears in the "To" field of outgoing mail?

That's a design feature.. you can't change it.

Also, most recipients will not see that email address, since mail clients
are designed to hide the address when viewing a received message.
