I cannot open a doc. or a pdf attachment in my Windows Mail. I have both
programs installed on the computor. Adobe and Windows Office Word 2003. How
do I associate them with Windows Mail?

You can't open them in the Preview pane.
If you open the message, can you then open them?
I can open them on my system. But there is no settings in WM for this.
Can you save them to disk, and then open them?

There is a known problem with pdf files, but the .doc files should open ok.

Save the attachment to a file and then open it from there
