Can I turn this off or delete and clear old addresses some how?

Windows Mail will remember up to 29 of the email addresses you
have most recently sent emails to. There is no easy way to remove
a bad email address, since it requires editing of the registry.
Eventually it will drop off the remembered list.
Until it does, just click on 'TO:' and pick the correct address from
the list of contacts.
