Realize of course you are making more head aches for yourself by adding a
POP3 connector.
I have never had to use the POP3 Connector in "ANY" SBS migration
At most I make sure backup MX Records (Which I recommend anyway.)
Adding something in a migration may cause you more issues.
The Amount of time you spend on configuration of the POP3 Connector
is longer than the time just to move everyone over.
(And since I work on a Per Hour Basis, Me charging more for wasted time is
frowned upon.)
There is the SBS2008 POP3 connector

If you need to Configure your mail server to answer for email for more than
one domain.

IMO POP3 should be considered DEAD and not ever used again.
Be sure to configure all PC's Laptops with the
http://connect
when adding them to the domain
this will configure RPC over HTTPS (Outlook Anywhere) on the Laptops
And your users will be "VERY" happy!
