Try this Brendan:
Look for the file in a sub folder called 'Sent Items' within your WLMail Message Store folder*, and within a folder partly named according to your e-mail account name. The .eml files have coded names, so you will need to sort by 'Date created' or 'Date modified' to help find the one you are looking for. After deleting it, you will still see the header of that e-mail in WLMail's message list, but you should then be able to delete that header.
*To find the path to your message store folder, in WLMail go to Tools->Options->Advanced [tab]->Maintenance...->Store Folder...
Your message store folder is a hidden folder, so make sure you have 'show hidden files and folders' checked in your Folder Options in Explorer (Tools->Folder Options->View [tab])
