When I import photo from my Digial camera via the Vista the file size of each phota is over 2MB. If I then open one of these photos in another photo editing package and save them the file size go down to 200kb. The file type in the same being jpeg. This there an option or way to stop the files being so large??

check the settings on the camera. If it is automatically creating JPEG file (as opposed to even larger RAW file), then the camera is likely using a very low compression setting in order to maintain a high quality photo.

Depending on how the camera presents the compression settings, a value of between 15% and 20% usually gives good results without too much loss in quality.

But really, would it not just be simpler to just use a larger memory card in the camera and then leave the image file at a high quality 2MB file?

As already advised look at the settings for your camera, I know with mine which is only a point and shoot ViviCam 6324, there is a setting where you can have it set for Image Resolution and Quality, you can also resize the images after capture as well if needed before you download them to your computer.
