I use my laptop as my desktop replacement and it is always plugged in. My question is do I need to remove the battery? does the laptop cut off the current to the battery once it is fully charged? and how will I know which power my laptop is using, battery or the plugged in. and I never unplugged my laptop even after turning it off. I sometimes use the battery and allow it to fully discharge.

FWIW I have been using laptops for over 15 years with their batteries left in situ. None of the batteries needed replacing & all were discharged on a regular basis.
Refer the battery icon bottom left hand side notification area. If it has a "plug" over it you are using power.

yes, it has a plug icon over the battery icon and it says fully charged 100%
now, its clear to me that my laptop is not using the battery when it's plugged in.
I have another question for you but this is out of the topic. You said that you've been using laptop for over 15 years? and for sure you are very familiar with the laptop getting hot. what laptop cooler are you using?
Hello again, I have only ever used the fans supplied within the laptops. I've never had problems with overheating on any of the laptops over all of those years. [& I have lived in some very hot & humid places.] I always make sure that the laptops are raised at the back slightly to allow for good air flow all the time. I do clean any dust or grot from both the top & underneath the machine frequently. The latest models seem to generate less heat & the fans are much less intrusive. Hope that helps.
