I would like to change the behaviour of the recent items folder. I believe it stores the most common items opened. I would like it to literally store the most recent items I open so that each time a new file is opened it overwrites the older files when it updates the folder.

not a perfect solution but if you right click recent items and click on explore you can then click on the date modified which may be a little better.

Well, this is NOT what you asked for, but if it would help at all to sort your Recent Items another way, seeing as, so far, we can't figure out if it's possible to sort them by date -- then here's an off-the-wall thought for you: For me, the next best thing is to sort alphabetically -- at least I can easily find what I want in the list that way. The way to do it is to open Recent Items, and highlight any item in the list. Right click on that item, and select: Sort by name. That will alphabetize the list.
