Creating Users in vista but without having the same programs

I know how to create users in Vista but I wanna have a user that has nothing as if it is a new computer, no games that are on the alpha user etc..im ready to strangle itunes and don't wanna lose my stuff but I wanna have a separate i tunes installed on the "NEW" user side...Every user I create has links to the alphas games itunes etc..Thanx

can't you go to the program file (itunes, ect) right click > properties > share tab > and choose not to share it?

start > computer > C: (or whatever drive windows is on) > program files > all the ones you don't want to share > right click > properties > sharing tab > click do not share > click apply
