On my updates settings page it is stuck on "Install updates automatically (recommended)". The box is faded out and I am unable to click on the drop-down. I'm sure my updates never used to be automatic...Is there a way to change this setting?

Welcome
First make sure that you are in an administrative account. If you are create a new administrator account yours may be corrupt. If that does not help.
Disable the UAC and boot. Then enable it again, see if things are better. If they are not try the hidden administrator.

Cheers for the suggestions, but none worked. I guess I'm going to have to live with microsofts updates being forced upon me.
See if you can reset it. After you do reboot then cross fingers
