An ISO image contains all of the files required for any installation, be it Home Premium, Professional or Ultimate, but each disc contains a file, ei.cfg, which states which version is to be installed. If you remove this file, then you get to choose which version to install when you install Windows. Please bear in mind that your product key is version specific, so installing Ultimate won't work for you.
